Roootin’s Iranian Kitchen offers a close look into the kitchen of an Iranian family, showing how they used traditional Iranian influences to create their signature Roootin taste. Combining traditional Middle Eastern influences with Western food culture, they came up with a cuisine which reflects their roots. The recipes in this book have been carefully created by mum and daughter, and range from aromatic stews packed with Middle Eastern spices, to avocado toast with za’atar, and mum’s delicious sweets and bakes. Roootin’s Iranian Kitchen brings together the essentials of Iranian cuisine, the healing properties and social aspects of food, with insights into the joy and process of creating food from scratch, to inspire you to cook with love and passion.

Bulbul Esmailzadeh Mother and medicine woman. She grew up in the countryside of Iran where she learned everything about the elements, what nature had to offer throughout the seasons and how to create food from scratch. Together with her family she fled her home country at the age of twenty-four and started a new life in the Netherlands. She took with her all the ancient knowledge she had learned over the years and never lost her passion for food as medicine. Bulbul transformed her passion into profession thirty-two years later. Together with her daughter she ran a cafe in Amsterdam where she was able to amaze and excite every single person who tasted her food. Solmaz Esmailzadeh Intrigued by anything mystical from a very early age, she watched over her mother and grandmother’s shoulder in the kitchen throughout her whole childhood. Later in life she became an engineer and entered the corporate world only to realise that her heart and passion truly lie very close to her roots. Together with her mother she decided to share their roots and the ancient knowledge they had brought with them from their home country, through food and community. Their family cafe stood for connection and ‘food as medicine’, offering colourful plates with exciting flavours that nourished both body and spirit.
