  1. The Art of Fermentation
    1. Sandor Ellix Katz

    The Art of Fermentation

    New York Times Bestseller

Library Journal- This is not a line-by-line recipe cookbook, but it contains detailed instructions on fermenting (or creating via fermentation) nearly every imaginable food or beverage. After a foreword by Michael Pollan, Katz ("Wild Fermentation") explores the scientific basis of fermentation, then gives details for creating everything from yogurts to prosciutto to wines, beer, and kombucha. He emphasizes how fermentation influenced human development. Used to preserve food, it affected human biology so that humans could eat foods that would be poisonous otherwise, and it had an impact on global human culture as a reflection of indigenous cultural identity. Simply put, fermentation allows lactic acid bacteria naturally found in the air to overcome and exclude bacteria that are harmful to humans, and it increases advantageous chemical compounds, such as vitamins, in the process. There is a generous photo section of tools, containers, and processes; along with fascinating electron microscope photos of bacteria, which convey a sense of wonder at the unseen world of fermentation. VERDICT: Katz takes fermentation down to the molecular level while keeping it conversational and accessible to the generalist. Fermentation foodies will be ecstatic.

  2. Crime and Punishment

    Crime and Punishment

So essential is Crime and Punishment (1866) to global literature and to our understanding of Russia that it was one of the three books Edward Snowden, while confined to the Moscow airport, was given to help him absorb the culture. In a work that best embodies the existential dilemmas of man's will to power, an impoverished student, sees himself as extraordinary and therefore free to commit crimes. English translators have struggled with excessive literalism and no translation is felicitous to the literary nuances of the original prose. Now, Michael Katz addresses these challenges with new insights into the linguistic richness, the subtle tones and the cunning humour in this sparkling rendition of Fyodor Dostoevsky's masterpiece.

    Unseen

Stigma still surrounds suffering from mental health problems, and in most low-resource settings in "developed" and especially the "developing" world, this prejudice is compounded by an utter lack of resources to address these problems. The class of mental health problems is the greatest source of morbidity worldwide compared to all other categories of health problems and is also the most neglected. The difference between the vast mental health needs worldwide and the scarce resources that address them is known as the "mental health gap." This book portrays this gap through the story of two men suffering from schizophrenia and clinical depression in an unnamed low-income country. At the same time, it portrays how "there" can be "anywhere" by providing glimpses of the mental health issues of a relief worker's mother back home. This book relies on the stories of Sam and Berko to bring alive the mental health gap and raise awareness of the all too often "unseen" presence of mental illness throughout the world, a problem that contributes to enormous suffering and disability without ever showing up on an X-ray or in blood tests, let alone in public discourse. The book aspires to educate on the mental health gap by showing rather than telling and using narrative rather than epidemiology and statistics. It will inspire mental health professionals to apply their craft outside of customary areas of mental health practice; policy makers and government planners to better allocate protections and resources to mental health problems; the public to advocate for change; and everyone to reflect on the sources of our distress and our contentment.

    Angels of Amsterdam

For fans of Irena's Children and The Dressmakers of Auschwitz, the never-before-told story of a Jewish daycare director who led one of the most daring rescue operations of World War II, saving 600 children from the Netherlands' Nazi occupiers—“a rare story that reframes the Holocaust narrative from victimhood to heroism” (Mitch Albom). Henriëtte Pimentel was an unlikely heroine. But when Nazi Germany invaded her native Holland and turned the theater next to her daycare into a detention center for Jewish families, she knew that she had to act. Recruiting young women and teenagers from her staff, Pimentel became the mastermind behind one of the boldest and most elaborate rescue operations of World War II, hiding and smuggling hundreds of children out of Amsterdam right under the noses of their Nazi captors—children who would have otherwise been deported to concentration camps such as Auschwitz and Sobibor. Armed with an array of clever tricks to deceive SS officers—trading baby dolls for children, handing their wards over hedges, and bundling them off in carts—Pimentel and her associates successfully saved as many of their charges as they could from near-certain death. Tragically, Pimentel herself would not survive: she, too, was eventually sent to her death. But her courage and that of her fellow resistors lives on in the survivors from her daycare, some of whom are in their 80s and 90s today.   Drawing on extensive research and original interviews with survivors and former teenage resistance workers, ANGELS OF AMSTERDAM is an astonishing true story of wartime solidarity and courage, immortalizing one of the most remarkable acts of anti-Nazi resistance ever recorded.

  5. The Bridge
    1. Benjamin , Katz

    The Bridge

Most books try to convince you. This one refuses. Because the problem is not that you don't understand. It is that you don't act. ________________________________________ You already know what is wrong: You see the short-term thinking. You recognize the emotional reactions. You understand the gap between what should be done-and what is done. And yet-nothing changes. Not in you. Not in society. Not in the systems we depend on. ________________________________________ The Bridge is not another book of ideas. It is a confrontation. A precise, uncomfortable, and unapologetic dismantling of the illusion that insight leads to transformation. It does not ask what you believe. It asks one question only: What changes in your behavior-within 24 hours? ________________________________________ Across its pages, Benjamin Katz exposes the hidden architecture of human failure: - Why intelligence does not translate into action - Why groups destroy clarity faster than ignorance - Why systems reward distortion over truth - Why time erodes even the best intentions And more importantly- He builds the missing layer: A structured path from recognition to execution. From thought to behavior. From Sapiens-to Mutant. ________________________________________ This is not philosophy. This is not self-help. This is a field manual for those willing to pay the cost of change. ________________________________________ Most readers will agree with this book. Very few will use it. And that difference- is everything.

  6. Dub Revolution

    Dub Revolution

The most abstract, playful and confounding of reggae subgenres, dub is a vital component of sound system culture that has wielded disproportionate influence. Emerging as an underground phenomenon in Kingston during the early 1970s, dub was wrought by sonic alchemists such as King Tubby, Lee 'Scratch' Perry, Prince Jammy and Scientist, conjuring musical mutations at the mixing desk. Dub reached other lands through the Jamaican diaspora and as Lloyd 'Bullwackie' Barnes furthered the form in New York, Dennis Bovell, Mad Professor and Adrian Sherwood conjured their own dub masterworks in London, Jah Shaka and his acolytes subsequently helping dub to achieve global reach. Widely adopted by post-punk producers and later a crucial influence on the underground dance music scenes of several continents, dub indelibly changed the techniques and aesthetics of music production with far-reaching effects; it's no exaggeration to say that without dub, there would be no hip-hop or house music.Dub is made from studio trickery, its auteurs fashioning something new by subtraction rather than addition, reversing standard recording techniques. It is a music of absence and deception, a ghostly sonic doppelganger with bass primacy and torpedoed song structures, full of holes and unexpected twists. The evolution of dub marks the birth of the remix and the emergence of the studio as an instrument in itself, a place where songs can be pulled apart and given wild reshaping, rendering a disembodied new form that is often cosmic and typically jagged. Dub's progression is also inseparable from the troubled history of post-colonial Jamaica, blighted by caustic Cold War interventions, attendant gang culture and communal breakdowns. Through first-hand testimony with dub's most noteworthy creatives, David Katz's monumental forensic history of an astounding subgenre that sounds like the future five decades after its inception stands as the authoritative book on a musical art form that continues to fascinate, generation after generation.

  8. THE UNUPGRADED MIND

    THE UNUPGRADED MIND

This is not another book about understanding humanity. It is a confrontation with its failure. We live in an age of deafening noise, inflated identities, and endless self-importance-yet beneath the surface, something far more dangerous unfolds: a species equipped with immense power, but governed by an unupgraded mind. The result is not progress, but a slow, intelligent drift toward regression. In this uncompromising work, Benjamin Katz dissects the hidden architecture of modern civilization: the loop of self-destruction, the illusion of personal significance, the emotional engines of tribal conflict, and the widening gap between micro-perception and macro-reality. With surgical clarity, he exposes the mechanisms that keep humanity trapped-repeating, escalating, and rationalizing its own instability. But this is not merely a diagnosis. At the core of the book stands a radical proposition: the emergence of the Mutant-not as a metaphor, but as a necessity. A new cognitive stance. A prototype of human evolution capable of transcending the limitations of the inherited mind. Where others describe the problem, this work dares to outline a direction.Through a series of conceptual "frames"-the trap, the loop, the inflated self, the noise-Katz transforms abstract philosophy into structural insight. The reader is not only invited to think differently, but to see differently. This is a demanding book. It offers no comfort, no easy optimism, and no ideological refuge. Instead, it asks a single, unavoidable question:If intelligence continues to grow-but wisdom does not-what future remains? Not belief-but execution. Not narrative-but structure. Not Sapiens as we are-but what we must become.

The Torah Commentary of Rabbi Shlomo Carlebach Exodus

The Torah Commentary of Rabbi Shlomo Carlebach provides a glimpse into the unusual way in which the late Rabbi Shlomo Carlebach received and transmitted Torah. It also aids the reader in bridging "Rabbi Shlomo Carlebach the great composer/singer" and "Rabbi Shlomo Carlebach the great scholar/teacher." When delving into the lives of Isaac, Rebecca, Jacob, Rachel and Leah, it is as if he is speaking of his own parents. The teachings in this book of commentary are not just meant to be read -- they are intended to be enjoyed and experienced as "holy music."
