This book is all about Balkan diaspora cooking and I bought it especially for a recipe for pita (pie) that my Croatian wife, Ira, pines for – it’s the taste of home for Balkan expatriates. I cooked it, she loved it and it has entered the repertoire. Friday is Pieday!
Spasia Dinkovski
is the London-based chef and founder of Mystic Burek. Launched as a delivery service in July 2020, before expanding to a shop and café in September 2023, it is a celebration of second-generation Balkan cooking, inspired by her grandmother's recipes.
